White Chocolate Coconutty Overloads

This recipe is in honor of my two little wild and crazy boys. For those of you who don’t know, they are two and four years old now. They love each other and love to fight each other …so it gets a little crazy around here. It’s these moments that being able to bring out a treat to stop them in their tracks is essential to me staying sane. The moment that they are sitting at the table watching their favorite show and devouring a cookie, I can go ahhhh!

Right now their favorite show is Despicable Me with the little yellow minions. The little girls in the show sell cookies and one of them is called coconutties. So this is where I got the idea to make something from their favorite show that they could relate to. And of course I couldn’t help but through in some white chocolate chips to make them even more overloaded.

White Chocolate Coconutty Overloads

2 1/4 cups unsifted flour

1 tsp baking soda

1/2 tsp salt

1 cup (2 sticks) butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

1 tsp vanilla extract

2 eggs

1 1/2 cups white chocolate chips

1 cup sweetened coconut flakes

1 cup pecan chips

Preheat oven to 375 degrees. Stir flour with baking soda and salt; set aside. Beat butter with the two sugars at medium speed until creamy. Add vanilla and eggs, one at a time, mixing on low speed until incorporated.

Gradually blend flour mixture into butter mixture. Stir in chocolate chips, coconut, and pecans. Drop by heaping tablespoonfuls onto a cookie sheet covered with parchment paper. Bake for 10 to 12 minutes or until golden.

Cool on wire rack and enjoy!

Yields around 4 dozen cookies depending on how big or little you make your cookies.
